Dual network cards puzzle

I have a small client who shares their admin operator with another company
in a shared office. Both companies will have 2 Win98 PC's, plus a new
machine for the admin op. One company already has a peer network running OK,
and the other wants to do the same. They want to minimise the chance of a
hardware or system problem on one side bringing down the other, but the
admin PC will be shared and networked to both sides.
Is a Win2000 Pro system with 2 network cards (connected to 2 separate small
hubs) a sensible choice for the admin machine? Will segmenting the network
in this way actually offer any real protection? Obviously the additional
hardware cost will be minimal, but are there likely to be any unusual
configuration problems? Oh yes, one last puzzle; Why do I agree to give
advice on things I know not a lot about? Doh!
