I have 5.5 and don't seemto have this feature, or have I missed something?

In photoshop 6 the text is placed onto the image rather than having to open
a popup box for it, making it easier to see what the final effect will be.
As John (below) says, the text is placed in a new layer by default and as
such will remain editable. I rarely rasterise a text layer until it is
absolutely necessary, as you can apply layer filters to it in it's 'active'
state.
