If this is just for demonstration purposes, how about a bootable Linux/*BSD
CD that includes a copy of Apache bound to the loopback interface? No
license fees to pay, relatively compatible (though I guess you'll want to
use the VESA framebuffer device for X to maximise compatibility), does what
you want...
Printing could be trickier.
Could be quite an interesting project, actually... :)
