I'd go with this option.
I prefer to have 2 cards so if I need a card I can always pull it out and
use it temporarily on something else, i.e. when I built my headless linux
firewall
If you don't want to be playing hardcore polygon shifting games (and even
then it'd use the AGP card anyway) then any recent half decent PCI card will
do IMO.
A word of warning, when you go dual head you will never want to use a puny
single display again. :)
