Because AV software only provides a sense of protection against legacy
viruses/Trojans. It will quite happily ignore anything that's not in its
definition files.
Remember nimda? It was almost a week after it hit before Norton would even
detect it reliably while running a manual scan (and that was with new virus
definitions being released almost every day!)
And that's saying nothing about custom Trojans that AV software will never
be
able to detect
