I have little knowledge of DreamWeaver but, yes your scripts will only =
work
if interpreted through a live web server, unless Dreamweaver has a built =
in
server then you need one to view your executed scripts.

What kind of scripts do you need, CGI/ASP etc.? Depends on the server =
you
are targeting.

Usually, Microsoft Web Servers will expect ASP, Linux Servers will be =
using
PHP or Perl etc.

sounds like you could probably get by with a simple form to mail script.
they are very common and often provided as a sample script by your =
hosting
company. These will also come with reasonably clear instructions, check
there first. If not, to find one that suits you, just use your =
favorite
search engine and type in "form to mail script", you will find any =
number of
free and configurable scripts with instructions, or serch for "form to =
mail
tutorial" with your favorite search engine and pick a tutorial that you =
find
freindly and roll your own.
