Bigg is the Old English for Barley, especially the hardy four-rowed kind,
and groat is from the same root as oats, so the whole area was dedicated to
the buying and selling of grain.
The Grainger Market was named after Richard Grainger, who was the business
partner of architect John Dobson, who rebuilt much of the town in the 19th
Century - including Grey Street, recently voted as the best street in
Britain!
You are pretty much right on the other two...
