You could Google around to see what's been done in this area - that sort
of thing is a popular topic for academic research - also look at
research.microsoft.com - they do quite a bit in signal processing etc.
One option would be to do a spectrum analysis, which should give you the
fundamental frequency and harmonic series, and also analyse the envelope
shape.
I'd start with a set of samples you've made on a synth with known
characteristics and see if you can match those, then move up to "real"
sounds.
