WorldPay provide the widest range of protection against fraud that I've
seen.

I used WorldPay a few years ago, but created my own customised shopping
carts. Although I think WorldPay are the best provider for their range of
customisation options, from the package I implemented ('Select COM' I
believe it was called) I wouldn't recommend them as the simplest to use for
the complete beginner, although I guess they've probably made things simpler
over the last few years!
Paysystems (www.paysystems.com) has been the simplest cart system I've used
recently. For basic set-ups they provide wizards to create the cart code for
you. Even for more complex set-ups, as long as you have a good working
knowledge of HTML setting up a shopping cart is reasonably straightforward.
