Julian,

In the settings for your web cam, you should be able to alter such
elements as the colour, gamma, brightness, contrast etc.
If so play around adjusting these settings until your preview shows the
image in greyscale. Then use some freeware web cam / TV viewing software
to save or display on screen.
You can find such software on Cnet (www.cnet.com) in the downloads
section.
