format menu - or SHIFT + COMMAND + T - convert to and from Plain / Rich

if you accidentally style any text (italic, bold whatnot) mail will
automagically convert the email to Rich Text to accommodate the style
info.

SHIFT+COMMAND+T will revert your mail back to good ol plain text
