I supplied some servers last year to a company, who didn't pay and then went
into receivership. I was told by a solicitor that if I could retrieve them,
WITHOUT braking the law, as they hadn't been paid for, I could, but if I had
to break the law (break in and entry) I had to go through the normal
channels

Now if you have access to the server, and you replace it with the original
site (ie you don't hack the server to gain entry) I would guess they don't
have a leg to stand on.

But you would probably get no work from them in the future, I guess if they
haven't paid you wont care.
