I'm not sure but i think the dissadvantage of microwaving generally is that
it boils the internal liquid of the food which is then lost to the
environment (courtesy of your microwaves extractor fan).

Steaming food still results in the heating of internal fluids but also adds
steam to the cooking environment so reducing the amount of fluid lost as
steam (the humidity reaches 100%). Maybe it even reintroduces fluid to the
food. Either way it generally results in food that is more succulent, can be
more moist, and can be firmer. Then again I'm sure if you have a container
of water inside the microwave as you cook it would help.
I could be talking bollocks again though as thats just a calculated guess
from school physics.

And do you know you can easily create plasma inside a Microwave? Seems a
bloody stupid idea to me but it works.
