Going to try the IMAP route. They're on broadband - my only concern is
if the broadband connection goes down they have no access to their
email.
With an IMAP client (such as outlook / outlook express) once the message
is downloaded, does it stay cached until "told" that it's been deleted ?

You mean they have forwarding to a single address and that's it?
If it's say bloggs.com, then register bloggs-mail.com with a more
flexible service (ukservers my current fave) and forward anything to
bloggs.com to [EMAIL REMOVED] and take it from there.
