FN-FORUM: MAC G3 hard drive replacement

Hi,
I usually lurk in the background, but have a rather desperate question
today. On my G3 blue & white Mac (not the I-MAC), the hard drive has just
decided to crash on me - totally gone.
I've found a working IDE Hard Drive in my storage, decided to take the old
one out and put a formatted replacement HD in. When I try and boot from the
CD, it runs the OS from the CD, but doesn't recognize the Hard Drive. So
when I try to install the operating system it goes up to "select destination
drive" and that's it - there is no destination drive.
Any ideas why? Or what I can do? Please?
