like ken, i've done this sort of stuff quite frequently in the past.
i'd say if fidelity is not a big issue (and your tape player is nowhere near
your computer) then andrew's suggestion is best. many non-trendy (i.e.
useful) mp3 players have line-in recording features these days. if the
interviews are long and the player's only got 256mb of flash memory, use MP3
encoding (with maybe even < 128kbps bitrate if needed). otherwise, use
16bit/44khz WAV if poss to avoid further degredation of sound quality.
if fidelity *is* an issue (and you can get your tape player and pc in the
same place at the same time), then definitely go with john's suggestion.
there are a number of pieces of free / low-cost recording software that
will not only record the audio at CD-quality but also provide filters to
remove hiss / crackle / tapenoise / the sound of someone coughing loudly in
the background.

Record it to a MP3 player/recorder that has a line-in (I've used an
Archos Ondio with good results), then just burn it using your favourite
software.
