We're got separate App Pools but one application is grabbing all the
memory and CPU and then the server dies horribly.

is this for a web app or just in general day-to-day work? if its
day-to-day you can import the pdf in to photoshop (i dont think cs/cs2
have the option though) and it'll extract the images for you....
