I've done this - have a lot to do with China.

You need to use UTF-8 for pages and database. A native Chinese translator is
a must (I have some who can help if needed). There are several variations of
spoken Chinese - including Mandarin, Cantonese, Hakanese, Fujianese and
Taiwanese. When it comes to writing, all understand simplified Chinese (try
not to use traditional Chinese).
