Something that came to mind :
You mentioned that they normally pick up things in a day.
Would it be feasible to split your course into may be 5 2-hour
sessions spread over a week or two.
Attending 5 different sessions to pick up something, may pose as a
barrier to some people ?
At least they would have to miss 5 half days worth of work, which
should feel good from your perspective ;)
