If it was me I'd dump him, I'm sure he causes you more stress than it's
worth, clients who suddenly announce deadlines on you are not worth
working with, I try to plan my work in blocks for clients, it's the only
way to juggle several clients at once. Why should other clients suffer
for the one that can't sort things out with enough time to get the work
done ?

If you have a contract with him, make sure whatever clause(s) that
allows you to quit the contract is met, if you don't have a contract I'd
just send an email saying you will no longer be working for him. I
wouldn't give reasons, that just gives them ammunition to try get you to
stay which by the sounds of things wouldn't be a good idea.
