awstats if you want to do it off-line without affecting visitors.
Google Analytics, or any of the other free and not-free web-based options
if you don't mind slowing the site down a tiny bit (as visitors' browsers
have to talk to Google's servers too).

Assuming you mean web logs, not mail logs or other server logs?
