If you really want a desktop GUI then I'd really recommend installing the
desktop Ubuntu and then installing the server components you need.

The only difference between desktop and server Ubuntu AFAIK is that the
server version doesn't install the desktop GUI.

OTOH you may find webmin does what you need.
