As I understand it (again, not having actually used it myself) you can
run your own Jabber server and therefore control who can access it and
you can also set up chatrooms and the like.

That's about the limit of my knowledge of Jabber I'm afraid, so you'll
have to hope someone else speaks up if you want to know more!
